Candied Pecans

When Caitlin and I were working on our Grim Peeper Panorama, her candied pecans fueled our creative endeavors.

This recipe also encourages creativity, as you can vary both the spices and the type of nut, if desired.  Candied pecans make a great snack on their own.  They can also be added to mashed sweet potatoes, or used to add a little extra punch to your pecan pie.

Candied Pecans

PREP TIME: 5 minutes
COOK TIME:25 minutes
YIELD: 3 cups of candied pecans

WHAT TO GRAB:
1 egg white
1/2 teaspoon vanilla extract
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon Kosher salt
3 cups pecans

HOW YOU DO IT:

1.  Preheat the oven to 300 degrees.  Line a baking sheet with parchment paper.

2.  In a medium bowl, whisk the egg white until foamy.  Add the vanilla, sugar, cinnamon, cloves, and salt, and mix well.  Add the pecans and mix well, making sure the pecans are well coated.  Using a fork, transfer the pecans to the baking sheet.  Make sure the pecans are separated and not too clumped.

3.  Bake the pecans for about 25 minutes, or until golden brown.  Allow the pecans to cool completely.  Serve (or store) at room temperature!

    Yum! I like to add a spicy kick to candied nuts. Chinese Five Spice is a great addition, as is ginger. I love the scent of roasting spiced nuts — it always conjures the holidays for me!
