If you were thinking about making my seven-layer spinach lasagna from the other day, grilled garlic bread would make the perfect appetizer.
Grilled Garlic Bread
Recipe from Steven Raichlen
PREP TIME: 10 minutes
COOK TIME: 5 minutes
WHAT TO GRAB:
1 loaf french bread
8 tablespoons butter, softened
4 cloves of garlic, minced
1/4 cup parsley, finely chopped
1/4 cup parmesan
1/2 teaspoon Kosher salt
1/2 teaspoon pepper
HOW YOU DO IT:
1. Working at a steep angle, slice the french bread 3/4 inch to 1 inch thick. You want the slices thick enough so that they’re sturdy on the grill.
2. Using a wooden spoon, cream the softened butter with the garlic, parsley, parmesan, salt, and pepper. Using an offset spatula or bread knife, generously butter both sides of each slice.
3. Grill over high heat for about 1 to 3 minutes on each side, or until nicely browned. Check frequently, because bread burns quickly on the grill!

Harder then I thought! If there is a flare up from the butter–even if you move the bread quickly–it can taint the taste quite noticeably. Also found out the hard way that I should reserve a spot on the grill for the bread. The slightest oil/residue on the grill ruined a few pieces. But thanks for the recipe! Makes for great presentation and definitely impresses. And of course get it right and it rocks. mmmmmm….garlic bread….
