I need my breakfast. Absolutely need it. Without my morning meal, I’m listless and unthinkably slow – both on my feet and in reflection.
Fortunately, this oatmeal hits the spot. The regular oats can be a bit worn and thin. Not as sustaining as I might need. The steel-cut variety, available in any grocery store, comes packed with whole grains and plenty of sustainability, perfect for a long morning of meetings.
Top with chopped pistachios for perfect presentation and a little extra crunch!
STEEL-CUT OATMEAL WITH CHOPPED PISTACHIOS
PREP TIME: 10 minutes
COOK TIME: 20 to 30 minutes
YIELD: 4 Servings
WHAT TO GRAB:
1 cup steel cut oats
2 cups milk
2 cups water
1 tablespoon brown sugar
1 tablespoon vanilla-sugar
1 cinnamon stick
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Seeds of two cardamom pods, crushed and ground
1/2 teaspoon Kosher salt
2 tablespoons chopped pistachios
HOW YOU DO IT:
1. Heat the milk and water over medium heat until just about to boil. Add the oats and reduce the heat to medium low.
2. Add the sugars, cinnamon stick, cinnamon, ginger, cardamom, and salt. Simmer, uncovered, for 25 to 30 minutes, stirring occasionally, until the liquid is mostly absorbed and the oats are tender.
3. Top with chopped pistachios and serve warm.
