One of the great things about making the candied ginger was the ginger syrup. As part of the process of making candied ginger, the ginger is steeped in a simply syrup for about an hour. The result is a sweet, intensely ginger syrup. Intrigued, I mixed this syrup with seltzer and found that I made myself the perfect ginger beer!
GINGER BEER
PREP TIME: 20 minutes
COOK TIME: 1 hour
YIELD: Makes four drinks
WHAT TO GRAB:
2 cups of ginger syrup (see recipe from candied ginger)
Seltzer water
Candied ginger (for garnish)
Kosher salt (optional)
1 teaspoon lemon juice (optional)
HOW YOU DO IT:
Over ice, combine 2 to 3 tablespoons of ginger syrup with eight ounces of seltzer water. Add salt and lemon juice if desired. Stir and garnish with a piece of fresh candied ginger!
