Endive Gratin

Whenever I think of endives, I think of the year I spent in France.

During my junior year of college, I studied in Paris, at the Institute of Political Science, or Sciences-Po, as they called it.  While there, my classes were entirely in French – it being a french university and all.  I even took a Russian language course: nothing beats learning a foreign language in a different foreign language.

For the first semester, all of the international students – and there were a few hundred – went to lecture with the native French students, but then had smaller discussion groups among themselves.  The idea was to allow us to develop our French skills sufficiently, so that we could be fully immersed in the regular discussion groups by second semester.  It also allowed us a chance to meet the fellow international students struggling to learn the History of the Second Republic in French.

Cranberry Sauce

During the Thanksgiving rush, the night before can sometimes be your only friend.

Asparagus and Mushroom Risotto

Risotto is one of those perfect dishes with which to experiment.  From chicken broth to mushroom soup, the short-grain rice is eager to absorb whatever liquid you throw at it.  At the same time, it’s creamy color and texture make colors and crunch a welcome addition.  Pairings range from smoked trout and roasted butternut squash, to the ever-popular asparagus spears and mushrooms.  Even cold leftovers provide a reason to rejoice, with warm suppli just around the corner!

Baked Sweet Potato with Maple-Pecan Butter

Sweet potatoes are probably the first thing I ever put in the oven.

I can’t quite remember how old I was, but I can remember the early fascination with the magic of baking.  I tore off a sheet of foil, set the oven to 420 degrees, and placed a hard, unattractive object into the oven.  There was no cutting, no slicing, no mixing, no peeling.  There was no other ingredient, and no other steps.  And yet, after ninety minutes, a sweet smell enveloped the kitchen and much of the house, beckoning me downstairs.  I grabbed the pot-holders, cut a tablespoon of butter, and sat down to dig into the soft, sweet flesh of a baked sweet potato.
