A little while back, Caitlin and I were invited for a trivia night. The invitation was somewhat last minute, so we needed to find a dessert we could make quickly. These blondies were prepped and done in a flash. And naturally, they were great. That is, the blondies were a much bigger success than we were that evening. (People definitely had more blondies than questions we answered correctly).
The next time you need a travel treat, a lunch box snack, or something to bring into the office, I suggest these
White Chocolate- and Chocolate-Chip Blondies
Recipe adapted from Cooking Light Dessert.
PREP TIME: 10 minutes
COOK TIME: 25 minutes
YIELD: 16 bars
WHAT TO GRAB:
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup butter, softened
2 large egg whites
1 teaspoon vanilla extract
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon Kosher salt
1/2 cup White Chocolate Chips, divided
1/2 cup Chocolate Chips, divided
HOW YOU DO IT:
1. Preheat the oven to 350 degrees.
2. In a medium mixing bowl, cream the butter and sugars until well blended. Add the egg whites and vanilla, and mix until fully incorporated.
3. Sift together the flour, baking powder, and salt. Working in batches, add the flour mixture to the sugar mixture. Mix until just incorporated. Add 1/4 cup of each chocolate chip, and mix into the batter.
4. Grease a 8 x 8- inch baking pan. Spread the batter evenly into the baking pan. Sprinkle the remaining 1/2 cup of chocolate chips evenly on top of the mixture. Bake for 25 minutes, or until a toothpick comes out clean. Allow the blondies to cool in the pan on a wire rack.
5. Slice ’em up and serve!

These look great! Question: how MOIST are these? and have you ever had a Blondie from the old Just Desserts store fronts in San Francisco? Their Blondies are the baseline which I use to judge all other Blondies and I’ve NEVER found anyone else’s even close to the deliciousness that Just Desserts (JD) had for sale. I also think that JD used butterscotch chips or something that was in addition to the chocolate.

I would say they are more on the soft, but chewy side, rather than the moist side. I have never been to Just Desserts, but I will definitely check the place out if I’m ever in San Fran. Thanks for the suggestion!
